2-1/2 cups GF flour blend (I use Better Batter)
* add 1 Tbls xanthan gum if your flour blend does not contain this ingredient
1/2 cup almond meal
1/2 cup honey
1-1/2 tsp salt
1 Tbls yeast
1-1/4 cup warm water
1/4 cup oil
1 tsp apple cider vinegar
2 eggs (or 1/2 cup apple sauce)

Preheat oven to 200°
Proof yeast in water with 1 tbls sugar.
Combine flours and salt in mixing bowl.
Add honey, vinegar, and eggs to yeast liquid.
Mix liquid with flour. Beat till well combined (1 min?)
Spread this batter-like dough into buttered bread pan.
Place in warm oven 45 min (it will rise to the top of the pan).
Leaving pan in oven, turn temp up to 350° and bake 35-40min. Cover lightly with foil after about 20 min or so- crust will be golden.
Cool on wire rack.
