Ingredients:
3 smashed bananas (if vegan, use 4 bananas)
2 1/2 GF flour — I like Better Batter
1/2 cup sugar
1/2 cup brown sugar
3 1/2 tsp baking powder
salt
3 Tbls vegetable oil
1/3 cup milk (I use Trader Joe’s rice milk)
1 egg (To replace egg, use 1/4 cup applesauce, or combine 1 Tbls ground Flax meal with 3 Tbls water and be sure to add additional banana noted above)
1-2 tsp Vanilla
DF/GF chocolate chips as desired (Trader Joe’s is so nice)
Optional: ground pecans, sunflower seeds, chocolate chips
Directions:
Set oven to 350º degrees. Butter bread pan and set aside.
Combine all ingredients and mix well. Pour into greased pan and bake for 1 hour, or 1/2 hour for muffins.
Bake until knife inserted into center comes out clean. The top will turn golden brown.
100g weight = 50g Carbohydrates.
This makes 24 muffins at about 23g carbs per muffin when using vegan recipe with rice milk, extra banana, applesauce.
