Crust
1 cup gf flour blend (I like Better Batter)
1/2 cup Earth Balance or butter
1/2 cup powdered sugar
lemon zest
Filling
1 cup sugar
1/2 cup apple sauce or 3-4 whole eggs
6+ Tbls lemon juice (I’ve used 2/3 cup for my big-time lemon-lovers)
1 Tbls corn starch
1 tsp baking powder
dash salt
Directions:
Preheat oven to 350°
Use 7×11 or 9×9 ungreased glass pan, or line your pan with parchment paper for easy removal and clean-up (my favorite).
Using a fork or pastry cutter, combine crust ingredients and press this onto the bottom of your pan. Bake for 20 min, until golden.
In a large bowl, combine filling ingredients with a whisk, and pour onto hot crust. Return pan to the oven and bake 25 min more. Top should be set and golden.
Cool completely. Serve with a dusting of powdered sugar.
